Happy Wednesday!! I hope you are having a great week so far. Since Fitmas started on Monday I figured it was time for Jeff and I to get back to eating healthy. Last night per Jeff’s request I baked chicken and rice for dinner. It takes about an hour to cook but it is so simple! And delicious! To go along with our baked chicken and rice, I make a variety of veggie sides depending on what we feel like (steamed broccoli or beans) but I usually just peel and cut cucumber slices.
Baked Chicken and Rice Recipe:
Prep time: takes about as long as your oven takes to preheat – 5 minutes?
Cook time: 1 hour
3-4 Chicken breast halves
20oz Cream of chicken
Rice brown or white
Veggies of your choice for a side
Making baked chicken and rice:
Preheat oven to 350 degrees.
Pour the cream of chicken into a baking pan – ours is about 8×13.
Lay your chicken breasts in the pan – 3 fit well in our pan.
Add some water and mix it up a little with the cream of chicken making sure to coat the chicken.
Once the oven is preheated, put your pan in the oven to cook.
So far so good (and easy), right?
After about 35-40 minutes, start cooking the rice. I use instant rice and the directions are simple: boil water, add rice, return to boil, reduce heat to low and let simmer for 5 minutes. (Not quite instant, but simple enough).
While the rice is cooking, I take the pan out of the oven and cut up the chicken breasts (which Jeff has mentioned why I don’t just cut them up beforehand and I don’t have a good answer).
When the rice is cooked, add it to the pan and mix it in then put it back in the oven.
Let the chicken and rice bake for about 10-15 more minutes to add flavor to the rice.
Remove your finished baked chicken and rice from the oven and let cool.
And it’s as easy as that! This baked chicken and rice is so simple to make. And it’s so delicious! I have always been too lazy to add other seasonings or ingredients, but you can add whatever you like! You can bake it with mushrooms, veggies, or seasoning to taste. There is so much you can do with this, but I like to keep it simple!
And of course I forgot to take a picture of the finished results, we were too excited to eat our dinner!
