I’ve been struggling with my cable & wifi for the last week. I guess the cable coming into our apartment is really old so a new one needs to be run. But I live in an apartment complex. So that requires getting permission and scheduling to have someone come out to crawl under the building. What do I do without being able to post on my blog or watch any of my shows? I make deviled eggs!
I was honestly not a huge deviled eggs fan until this year. A really close family friend made them for my moms celebration of life and I couldn’t. stop. eating. them. They were amazing, though I partially think I loved them because that it wasn’t my dad making them (sorry dad). What was her secret to the best deviled eggs? Fresh, organic eggs. And hot sauce!
So here is my recipe for the BEST deviled eggs.
First, you will need to have some hard boiled eggs. Put eggs into a pot and fill with cold water just covering the eggs. Bring the water to a rolling boil, turn off the heat and let the eggs sit and cook in the water for 15 minutes. Then immediately take the eggs out and run under cold water or put into a bowl with ice cold water. This stops the eggs from cooking any further.
Peel your hard boiled eggs. Tap the bottom of the egg (big side) to crack it and peel gently. If you’re having trouble peeling your eggs, try doing it under running water! Then cut your eggs in half and scoop out the yolks into a bowl.

Mix the yolks up very well before adding the following:
2 tablespoons of mayonnaise
1/2 tablespoon of mustard
1/2 teaspoon of Worcestershire sauce
Several dashes of hot sauce (I use Tapatio)
Salt and pepper
Mix well then spoon into your eggs or create a pipette out of a ziplock bag and squeeze onto your eggs! Then garnish with paprika!
